      Well. Hello there.
    
                
      You signed up for this newsletter a while back, and I've been meaning to write ever since. I kept telling myself: "Joseph, sit down and write the email." And then I'd get distracted at the North Market debating whether the fennel from Wayward Seed Farm was sufficiently fennel-y enough.
    
                
      (It was. It absolutely was.)
    
                
      Anyway — April is here, the spring menu is ready, and two of this month's four dinners are already gone. Scroll down. There are seats with your name on them. Metaphorically. I haven't written anything on the chairs.

      Thursday, April 24th
    
                
      A spring dinner. Seven courses. An intimate dining room.
    
                
      Seven courses built around what spring is doing right now in central Ohio — which is, frankly, a lot. I've been at the farms. I've had the conversations. The vegetables are ready and so am I. Seats are limited to eight people, all of whom will leave with new opinions about what a radish can do.

      A slower evening. Seven courses. Slightly more cheese energy.
    
                
      Sunday dinners have a different pace — unhurried, a little longer at the table, the kind of evening where someone always ends up asking the whole room a really good question over dessert. Same seven-course spring menu as Thursday. Same unreasonable attention to where every ingredient came from. Still eight seats. A few of them are yours if you want them.

      A WORD ABOUT THE INGREDIENTS
    
                
      Everything on the plate has a story.
I will absolutely tell you that story.
    
                
      Everything that comes to the table — the herbs, the proteins, the obscure vinegars I'm slightly obsessed with — is chosen by me, with my actual hands, from farms and purveyors I've developed actual relationships with. I'm at the North Market most Saturday mornings. I text the farmers. I know the name of at least one goat. (Gerald.)
    
                
      This isn't a restaurant. There's no back kitchen. There's no line cook named Dave. There's just me, an intimate dining room, and a genuinely unreasonable amount of care about what ends up on your plate.
    
                
      WHAT TO EXPECT
    
                
      The Whole Evening,
Explained Honestly
    
                
      It's an intimate dining space — warm, well-lit, and smelling like whatever I've been cooking since noon. Eight guests per evening. You'll sit with strangers who become, in my experience, not-strangers by the time the cheese course arrives.
    
                
      Seven courses. Dietary restrictions are welcome — just let me know when you book so I can plan accordingly. Cash or Zelle on the night. And yes, there will be puns. This is not a warning.
    
                
      There are a few seats left.
